A taste of Italy

Just going to kick this email with a giant disclaimer.... I am not Italian. These may not be authentic recipes, but they are delicious. My daughter and I traveled to Italy a few years ago, so it's fun to reminisce on some of the food we ate there (like Bolognese in Bologna!). You can find all of our Italian recipes here, but I'm going to highlight a few of my favorites (it was so hard to narrow down, so check out the end for a few bonuses).

Homemade Spaghetti Sauce

One of the most popular recipes on Rachel Cooks! But don't take it from me - read one recent review: "I’ve been looking for a spaghetti sauce recipe that tasted like what I grew up on. After making many different recipes, I finally found it! I made this sauce for dinner last night and it is wonderful. I felt like I was back at mom’s dinner table again. Rachel this is a wonderful sauce recipe and I can’t thank you enough for posting this recipe for us. This sauce is so good, I could put it in a bowl by itself and eat it like cereal!!!"

Staub Dutch Oven

This pot (5.5 quart size) does it all! It's perfect for simmering sauces or making one pan pastas. The white truffle color is my favorite. 😍

Arugula Salad

The next one is another simple classic - arugula salad. It goes perfectly with spaghetti, just saying!

Creamy Tuscan Mushrooms

Next up, ​creamy Tuscan mushrooms​. They are so good I could make a meal out of just them. Don't forget some fresh bread to dip in the sauce!

Zuppa Toscana

If you've ever eaten at Olive Garden, you've likely seen ​Zuppa Toscana​ on their menu. Well, this version is MUCH better. If you like restaurant copycats, make sure to try this one too.

Manicotti

Classic cheese manicotti - it doesn't get much more delicious and comforting than this!

Aperol Spritz

The last recipe I'll share is a cocktail that's perfect as the days gradually start to get warmer. An ​Aperol spritz​ (or an NA version) is one of my go-to drinks on sunny days!

I've tried a bunch of NA aperol alternatives, and Lyre's is my favorite! I like to mix it with blood orange tangerine Spindrift. (Not sponsored!)
