Fresh basil is great, but it’s not always easy to find, and honestly it can be expensive. Arugula makes such a good swap in pesto. It’s bold, fresh, and turns into a pesto that works for way more than pasta. I love to spread it on sourdough toast and top with a fried egg.

As a bonus, it freezes super well, so you can make a big batch and save some for later.
