New When Life Gives You Lemons, Add Blueberries & Flip

Every summer, we do a week at a lake house with my extended family. Before the week starts, my parents go blueberry picking and bring pounds and pounds of blueberries for us all to enjoy. (Yes, I'm very spoiled and have the best parents ever.) Most of the year, I'm not that interested in blueberries, but summertime Michigan blueberries are practically a completely different fruit. They're so good.

While there isn't anything better than in-season fresh berries, these pancakes work well with frozen blueberries too. And if any pancake is a summer pancake, it's lemon blueberry pancakes.
